Our Story

It all started with a guy and a girl with tons of passion and big dreams and even BIGGER appetites!! Each having an uncanny knack for serving, pleasing, and entertaining others. Ernie’s earliest memory of eating out was accompanied by a vison of owning and operating his own place…so all that “food”ness could be at his fingertips from the time he woke and even after he laid down his head. Ernie’s career journey began in his teens-flippin’ burgers and slingin’ wings, it was clear even then-he LOVED everything about the business. Tracy came to be known as a food mixologist with her appetite for Chubbalicious Food-and a flare for throwing random ingredients together to create something scrumptious. Their paths collided as they entered their 20’s and they’ve been sharing meals ever since.

Ernie spent most of his adult life stopping at every empty building he drove by, envisioning how his dream would be lived out in that spot.  These weren’t just local buildings either.  Even on family vacation-whether traveling throughout the US, Canada, and Mexico, he would stop to peer through the windows of any building he thought had potential, drawing up layouts and a design in his mind of how his restaurant would be set up in that building.  The other joys of his life, Saige, Isaiah, and Raynelyn would sit in the back seat and whisper to each other "Hope dad doesn't see that empty building over there....." followed up with “Aah man, guess it’ll be another hour before we get to the beach…” As frustrating as the delays in planned events could sometimes be, Tracy loved seeing Ernie's eyes light up with excitement during these moments and not only supported his vision, but shared it.   

Their energy and drive to serve huge portions of great food at reasonable prices in a FRIENDLY, FUN, WELCOMING AND INVITING manner led to the opening of Chubby’s American Grill- where guest didn’t just WANT to come back more-they NEEDED to. Several years and 2 restaurants later, circumstances changed, and the Miller family of 5 relocated to Goldsboro, North Carolina. This family affair is super stoked to start cookin’ for Wayne County with their spin off, Chubby’s On The Go. They can’t wait to see you Come Hungry and Leave Chubby!!
